Bluebird Care Wexford Host Guess Who’s Coming to Tea

Come along on Friday 3rd October and you never know who might show up!

Bluebird Care in Wexford is inviting the local community to join them at Guess Who’s Coming to Tea on Friday 3rd October from 10.30am to 12noon at their offices at 6 Upper George’s Street, Wexford Town.

Guess Who’s Coming to Tea is a joint charity fundraiser being organised by the Irish Guide Dogs for the Blind and the older people’s charity Age Action as part of UN International Day of Older People on Wednesday 1st October and World Sight Day on Thursday 9th October and they are encouraging people to host tea parties at home or at work.

Director of Bluebird Care Michael Corcoran says, “An added attraction of hosting a tea party is that you might have a celebrity guest show up.” Bluebird Care is the main sponsor of Guess Who’s Coming to Team as well as sponsors of National Positive Ageing Week which runs from 1st – 9th October.

Age Action and Irish Guide Dogs for the Blind are hoping to raise €100,000 which will be divided between both charities in order to help them continue offering the programmes and services we currently provide.

Bluebird Care Galway Wins National Q Mark Title

It’s official! Bluebird Care Galway, based in Parkmore, has just been named as the Best Homecare in Ireland for Quality Management Systems at this year’s National Q Mark Awards. They were also runners up to Road Bridge as National Winner’s for “Best Company in Ireland for Quality Management Systems”.

Chicken Celery & Lemon Salad

I got married in March 2013. Set in the incredible grounds of Viewmount House, I had planned seven plus courses of the finest food you could imagine. I was thinking, what course will they love most? Will it be Anise Orange Cured Duck leg Confit or Pig’s Tail Croquettes with Yuzu Gel, Piquillo, Micro Cress and Pear Mustard?

Maybe it’ll be Salt Fried Sirloin Steak with Peppercorn Courvoisier Sauce, Colcannon & Straw Potatoes or the Dessert of Valrhona Chocolate Tote with Pear and Celery Ice Cream? No. The dish everyone talked about was the one I hadn’t given a second thought to. It was about 4am and the poor DJ had finally stopped playing music and out rolled the sandwiches.

I’ve always made chicken salad the same way but I never gave it much thought. Needless to say it has become a regular request from my wife Netty now on Sunday evenings whenever she’s getting ready for school the next day.

The mixture of lemon juice, mayo celery and chicken gives this an addictive taste. Try it for yourself. You’ll never make a chicken sandwich the old way again.

This is a South African favourite and one I first started making about 14 years ago in Boston. The cheese mix is pretty much the same as that of the Naan Bread Pizzas, which is in the book also, so if you make the mix why not try your hand at both. The cheese mix will last a few days in the fridge covered.
